Description
There are 4 options for wiping devices:
Manually from the device under Settings > General > Reset > Erase All Content and Settings.
This option can be restricted from Jamf School and may be greyed out on devices.
Sending the Erase Device command from Jamf School.
Requires the device to be communicating with Jamf School.
Restoring with iTunes/Finder.
Restoring with Apple Configurator 2.
The first two options are quicker if they are possible. In scenarios where devices are not communicating with Jamf School (such as being stuck in Lost Mode, expired APNs, etc) and Erase All Contents and Settings is not available (it is restricted by MDM, the password is not known, etc.) you have to use an Apple tool to perform the restore.
Device erasure via iTunes/Finder
We can follow the steps below to put devices in recovery mode and then restore. This option should work even if pairing is restricted.
Follow the instructions in steps 1 - 3 of the following document to place the device in Recovery Mode:

Once the device is in recovery mode, a prompt will appear within iTunes/Finder asking to Restore or Update.
Choose Restore. This will restore the device to the factory settings.
On the 2nd prompt that appears, choose Restore and Update.
The erasure process should begin at this point. It may take some time to complete. Do not unplug the device til all steps are finished.
Device erasure via Apple Configurator
Plug device into a computer running Apple Configurator.
Highlight/select the thumbnail for the device in Apple Configurator.
Use the Action > Restore option.
Click Restore on the resulting warning to begin the erasure process.
After Restoring Devices
Devices will return to the Hello screen of the Setup Assistant. If the device is assigned an Automated Device Enrollment profile in Jamf School, the end user will be prompted to enroll after connecting to a network in the Setup Assistant.
